As antipasto platters become more and more popular, I find I am getting a lot of requests for Marinated Mushroom recipes… Marinated mushrooms fit perfectly into any antipasto platter!
Marinating mushrooms is also a delicious way to preserve them. A good method for making marinated mushrooms is to bring a couple of cups of white vinegar, a tablespoon of salt, peppercorns, garlic and bay leaves to a boil and then add whole petite mushrooms or quartered mushrooms.
Gently boil the mixture for about 8-10 minutes. Spoon the mushrooms into hot sterilized jars. Pour in a few tablespoons of good quality olive oil, put the cap on the jar, and gently shake to make sure that everything is covered in oil. You can keep this refrigerated for up to 1 week (although, in my house it’s lucky if they make it past 2 days).
