Stuffed Mushrooms Save the Day… Again!

What is your “Go-To” recipe when you have more company than you expected?

Mine is stuffed mushrooms.

I think I have mentioned before, when I attend get togethers, my friends and family pretty much expect me to bring stuffed mushrooms… I guess it’s a given.

Last night, while at my weekly family dinner, we had a few unexpected guests show up. Fearing that we didn’t have enough food on the go to feed everyone, we whipped up some stuffed mushrooms.

I often use this recipe because 1) it’s very easy to prepare, 2) I often have the ingredients in my fridge, but if I don’t it is very easy to customize, and 3) … well, simply put, it tastes delicious!

Everyone-Expects-Brittany-To-Bring-These Cheesy Crab Stuffed Mushrooms

6 large crimini or white mushrooms
1 package crab meat (or lobster)
3 oz plain or flavoured cream cheese
1 tbsp Cajun seasoning (or seasoning of your choice)
1/2 cup shredded Mozzarella cheese, divided

Remove the stems from the mushrooms. In a large bowl, combine chopped crab meat, cream cheese, and seasoning; mix well. Spoon filling evenly into caps, mounding as necessary and place in shallow baking pan. Sprinkle Mozzarella cheese on top. Bake in 400°F oven for 15-20 minutes or until mushrooms are heated through, and cheese is bubbly and melted. Serve immediately, as everyone will already be standing around the oven waiting for them to come out anyways!

Makes 6 appetizer servings

Variation: Substitute about 12 small mushrooms for the large.

    I've made the same dish, adding more cream cheese along with panko bread crumbs to stretch the crab further, and it's delicious.
