Caramelized Onion, Mushroom & Four Peppercorn Goat Cheese Pizza

Like I have always said, pizza is my go-to meal for a Friday night. Now that school is back in full swing, the sports teams are starting to meet, and extracurricular activities are starting to take priority who doesn’t want a quick and easy dinner?

This easy Caramelized Onion, Mushroom & Four Peppercorn Goat Cheese Pizza fits the bill. Although caramelizing the onions takes up a good chunk of time, the good news is they can be prepared ahead of time, and reheated for this pizza.

Everybody loves pizza on a Friday night…

Caramelized Onion, Mushroom & Four Peppercorn Goat Cheese Pizza

1 packaged Multigrain Thin Pizza Crust
1 large yellow onion
1 tbsp butter
sprinkle of salt
1 tsp sugar
splash of balsamic vinegar
2 medium portabella mushrooms, sliced thick
1oz four peppercorn goat cheese

1. Slice onions thinly. Add onions with butter to a heavy bottom pot over medium heat. Spread onions out evenly. Stir occasionally. After about 10 minutes sprinkle onions with salt and sugar. If the pan starts to look dry and the onions start to burn add a bit of water. Continue to cook 10 minutes, stirring more frequently as onions start to caramelize. Stir in balsamic vinegar to deglaze the pot. Add sliced mushrooms to the pot, and cook another 10 minutes or until mushrooms are cooked.
2. Spread the onion & mushroom mixture over pizza crust. Bake in 425 degree oven for 5 minutes.
3. Remove from oven and sprinkle with goat cheese. Return to oven and bake until goat cheese is warm.
4. Serve immediately.

    I love this pizza, what a wonderful idea. I have made a pesto pizza with mushrooms once, and it was great. I should try your recipe. 🙂
