Mushrooms + Eggs = Breakfast
As we approach the weekend, I’m starting to plan my weekend meals…and by meals, I mean breakfast. Breakfast is the most important meal of the day and is often the meal most forgotten as I rush out the door in the morning. Weekends are that sacred time when I get to sleep in, take my time with a pot of tea and make a delicious, full breakfast. Nothing screams breakfast like eggs! In all of my favourite morning meals, eggs play a very important role.
Eggs pair nicely with almost everything in my fridge, including mushrooms! Adding mushrooms to the the first meal of your day is key to maintaining a strong immune system during cold and flu season.
Mushroom Scramble on Focaccia is a healthy, filling way to start your day. It’s great for someone who has morning plans, since it will only take you a total of 25 minutes to prepare and another 5 minutes to devour- it’s just SO GOOD!
If you’re graced with a little extra time in the morning, cook up this Rustic Salmon Quiche. It takes close to an hour and a half from start to finish, but is well worth the time! Not only is this an impressive breakfast dish for any occasion, but it’s also an excellent source of vitamin A, riboflavin, folate, vitamin B12 and iron.
