Behind the Scenes at Mushrooms Canada: Toronto Gourmet Food & Wine Expo

What a busy and exciting weekend Mushrooms Canada had at the Toronto Gourmet Food & Wine Expo! All weekend long, we were sauteing Fresh Ontario Crimini Mushrooms in Olive Oil and Italian Seasoning to nearly 50,000 hungry people!

The show kicked off on Thursday with the sneak preview VIP night and ended on a very busy Sunday in Toronto, with the Christmas parade, football game, basketball game and the Expo, yet the show somehow managed to be busy straight through the end. So much so, that we actually ran out of mushrooms to sample! That’s always the sign of a good weekend.

With such a huge show, I still feel I missed some of the amazing booths. Every time I took a walk around I found something new and delicious! Of course I could never pass up delicious mushroom dishes though which led me straight to the Frankie Fettuccine Food Truck for a sample of their Forest Mushroom Risotto

 

…and to the Niagara College Canadian Food & Wine Institute Food Truck, conveniently located right behind our booth, for a tasty bowl of Crimini and Button Mushroom Mac n’ Cheese. After a few trips to this truck, we just had to get the recipe! You can find the full recipe here.
