Just in time for the holidays, she’s sharing a quick, simple and mouthwatering appetizer.
Hi everyone. My name is Britt and I write a blog lifestyle called My Daily Randomness. Some of you long time readers might recognize me; I was the past marketing manager for Mushrooms Canada. It’s funny how I have come full circle and I am now sharing one of my favourite mushroom recipes with you as a guest blogger.
As the holiday season approaches and the mad rush to decide upon your holiday menu begins, I like to turn to my favourite mushroom recipe; Bacon Wrapped King Oyster “Sea Scallops.” The ohhs-and-ahhhs I get over this recipes is flattering. They elicit such comments as, “surely you’ve spent all day making these?” and “please, please, please share the recipe!” That’s right, this is a highly sought after, crowd-pleasing recipe, and I am sharing it with you!
How many of you have completely overlooked the king oyster mushroom when standing in front of the mushroom display case? Nothing to be ashamed of, I mean, it is sort of an intimidating mushroom… but I assure you it is easy to prepare and the star of this dish. King oyster mushrooms have a mild flavour and a chewy texture making them an excellent replacement for sea scallops. Ooops the secret is out! These bacon wrapped sea scallops actually don’t contain scallops at all! The big and hearty king oyster mushroom does a bang-up job of standing in! So well in fact, guests at your holiday party will second guess you and swear it’s seafood. They will be the first thing to disappear from your holiday spread, I can absolutely guarantee you of that!
Bacon Wrapped King Oyster “Sea Scallops”
Robust king oyster mushrooms do an excellent job standing in for sea scallops in this holiday appetizer recipe. Strips of bacon are carefully wrapped around medallions of king oysters, secured with a toothpick, and then baked until crisp and tender. Guaranteed to please even the most dedicated sea food lover!
6 large king oyster mushrooms
6 pieces of bacon, cut in half
1. Preheat over to 375F
2. Slice king oyster mushroom stem width-wise, into 1 inch thick medallions. From 6 mushrooms you should get about 12 medallions. You can reserve the cap to use in another recipe.
3. Wrap 1/2 a slice of bacon around each round and secure with a toothpick.
4. Bake on foil lined baking sheet for 35-45 minutes, or until bacon starts to crisp. Turn once halfway through.
5. Sprinkle with sea salt just before serving.
