Fun at the London Wine and Food Show

Mushrooms Canada would like to thank everyone who came out to see us at this past weekends London Wine & Food Show! There was tons of delicious food and great beers and wines.

We hope that you enjoyed the sample of Fresh Sautéed Mushrooms, and also had a chance to grab our new recipe booklet & brown paper bag.

If you were around all weekend the Food Network Cooking Stage was definenlty the place to be. On Saturday afternoon, I was joined on stage by Angie from the Dairy Farmers of Canada who talked a little bit about Brie as I cooked the delicious Baked Mushroom Topped Brie recipe.

Sunday's main attraction was the oh-so-entertaining Chef Lynn Crawford, who cooked up a storm on stage with several volunteers. Lucky enough we were able to snap a quick picture with Lynn...

We also learned that she traveled to Oregon to go mushrooms picking, and is a true mushroom lover! Go Lynn! You can check out her new show "Pitchin' In" on the Food Network.

We were also pleased to see that we were not the only ones at the show how appreciated fresh mushrooms. Fanshawe's College's Culinary Students were also there flambéing up a savoury Mushroom Crostini.
They were also kind enough to allow me to take down their "secret" recipe for you.

Ingredients
1 tbsp minced shallots
1 tbsp minced garlic
1 tsp minced thyme
1 tsp minced basil
1 cup sliced fresh mushrooms (crimini, shiitake, oyster)
1 tbsp brandy
2 tbsp chevre (goat cheese)
Baguette, melba rounds or crackers

In a hot pan saute shallots, garlic, thyme, basil, and mushrooms, about 4-5 minutes.
Add brandy to pan and flambé.
Stir in chevre until melted.
Serve on a lightly toasted baguette, melba round or cracker.

Mushrooms Canada also conducted a draw to win a T-Fal Hot Spot Frying Pan. Congratulations to Shirley G. from Chatham on winning, we hope you put it to good use sautéing up some fresh mushrooms!

London Wine and Food Show 2010

London Wine & Food Show Looking for something to do this coming cold January weekend? Why not come on out to the London Wine & Food Show at the Western Fair!

This year's show promises to be better than lasts, featuring lots of Ontario wines & fine foods, cooking demos, and tasting seminars.

Mushrooms Canada will be there sautéing up some fresh Ontario Crimini Mushrooms, and handing out our delicious recipes.

Stop by our booth on Saturday evening for our "Ask a Mushroom Farmer" session, where you can ask a local mushroom farmer anything that's on your mind.

Make sure you had over to the Food Network Cooking Stage, Saturday at 3:00pm. I will be cooking up a savoury mushroom recipe: Baked Mushroom Topped Brie, with fresh cheese provided by the Dairy Farmers of Canada. Delicious! You won't want to miss it.

And to top it all off, the fabulous Lynn Crawford will be there cooking on the stage on Sunday... I wonder what she will make? I hope it uses mushrooms!

Canadore College Student Chefs Win the 2009 “Make it with Mushrooms Masters” Title

Canadore’s Mushroom Cannelloni recipe and cooking video wowed the judges in the Third Annual “Make it with Mushrooms Student Chef Challenge.”

“Creamy, elegant and surprisingly easy to prepare,” says Clare Jones, home economist, nutritionist, and judge in this year’s Make It With Mushrooms Student Chef Challenge. “The team from Canadore College certainly brought their A-game when creating both their written recipe and corresponding cooking video.”

Similar to last year, this year’s challenge was extremely close with only a few points separating the first, second and third place winners, but in the end Canadore College claimed the title.

The Canadore College student chef team, consisting of Ryan Stencill and Isaac Bonfield, joined by video team Matthew Fraboni and Jeff Chattaway, worked under the direction of their course director Derek Lawday to create an elegant, yet simple recipe; Canadian Mushroom Cannelloni in a Goat Cheese Tarragon Cream Sauce.

Judging was based on a set of criteria that tested the student chefs’ culinary skills; taste, presentation and originality. Also included in this year’s challenge was a video submission. Videos were judged on a set of criteria including delivery of messages, originality and entertainment.

As the winning team, Canadore Collge was awarded a certificate recognizing their achievement as well as a $1,500 grant for their program, $1,500 for the student chef team, and an additional $600 for the video team.

“We plan to contribute our winnings towards our education and future competitions,” says the Canadore Student Chef team. Course Director Derek Lawday says the grant money will be used to “purchase equipment and offset travel to other competitions.”

The second place winners, Fanshawe College, were awarded a $1,000 grant, $1,000 for the student chef team, and $350 for the video team for their flavourful Fresh Ontario Mushroom Cheddar Burger with Roasted Peppers, Sweet and Sour Shallots, Chipotle Mayo and Portabello Fries.

Third place winners, Georgian College, were awarded a $500 grant, $500 for the student chef team, and $200 for the video team for their hearty and satisfying Mushroom Stampeder Dip with Sweet and Spicy Potato Chips.

This was the third Make It With Mushrooms Student Chef Challenge conducted by Mushrooms Canada. Seven community colleges accepted the challenge back in September, and each submitted a mushroom recipe and cooking video.

“This year’s challenge was distinctively different than last years, as we had removed the cook-off portion and replaced it with a video submission,” says Mushrooms Canada Marketing Manager Brittany Stager. With the demand for online cooking videos rising, Mushrooms Canada sees this challenge as a unique way to highlight fresh Ontario Mushrooms, and for the Colleges’ Culinary programs to showcase their students, culinary abilities, and facilities.

Mushrooms Canada’s Video Contest Challenges Student Chefs to “Make it with Mushrooms"

Ontario Community Colleges participate in third annual mushroom recipe competition.

GUELPH, ON – New and unique were the two attributes that came to mind when Mushrooms Canada designed the third annual “Make it with Mushrooms” Student Chef Challenge. After two successful years, Mushrooms Canada decided on a format change that was unique, innovative, and never done before; a video submission.

Community Colleges from all across Ontario were invited to participate. Cambrian College in Sudbury, Canadore College in North Bay, Conestoga College in Waterloo, Fanshawe College in London, Georgian College in Barrie, Humber College in Toronto, and Niagara College in Niagara have accepted the challenge.

“This year’s challenge is distinctively different than last years, as we have removed the cook-off portion and replaced it with a video submission,” says Mushrooms Canada Marketing Manager Brittany Stager. With the demand for online cooking videos rising, Mushrooms Canada sees this challenge as a unique way to highlight fresh Ontario Mushrooms, and for the Colleges’ Culinary programs to showcase their students, culinary abilities, and facilities.

“I like the new format, especially the video idea - it is a great way to connect with our technology savvy students and work with other departments of the college such as Broadcasting,” says Fanshawe Colleges Culinary Program Coordinator Patrick Hersey.The Student Chefs will compete for a chance to win a $1500 team scholarship, a $1500 donation for the Colleges’ Chef Training Program, and the title “Make it with Mushrooms Masters.” The winning team’s video production group will also receive a prize of $600.

Each team of Student Chefs will submit one Main Course recipe video featuring the star ingredient; fresh Ontario mushrooms. Submissions will be judged on the basis of Presentation, Taste, Simplicity, Consistency, Originality, Nutrition, Story and Video Production. The team with the highest score will be named the “Make it with Mushrooms Masters.”

Contest entries are due by November 13th 2009, and the "Make it with Mushrooms Master" will be named by December 1st, 2009.

This will be the third year Mushrooms Canada hosts the Make It with Mushrooms Student Chef Challenge, and hopes to make it a National Challenge in 2010. “Nurturing the skills of today’s youth and tomorrow’s influencers is very important to Mushroom Canada” states Mushrooms Canada’s Executive VP, Bill Stevens. “Working with the student programs at Ontario’s community colleges has proven to be a successful strategy to achieve this goal.”

Pick Ontario Freshness

What did you do yesterday afternoon? Well, if you were downtown Toronto at Queen's Park you were certainly in for a treat.

Over 15 Ontario food associations and groups gathered in partnership with Foodland Ontario for the annual Pick Ontario Freshness Farmer's Market.

Queen's Park Pick Ontario FreshnessOntario Minister of Agriculture, Leona Dombrowsky, opened the farmers market at noon with announcement urging Ontarians to continue to purchase fresh Ontario products.

Much was to be sampled, from Ontario pickled eggs, to our fresh crimini mushrooms with dill dip, the day was filled with local products and local flavours.

Even Ontario Premier, Dalton McGuinty, had time to come visit and enjoy a sample of fresh Ontario mushrooms.

All-in-all it was a beautiful day filled with local food, and a strong reminder to Ontarians to enjoy locally grown foods as much as they can.

The National Women's Show Ottawa

We're at it again! This weekend we are heading to Ottawa for the National Women's Show.

A Weekend at the Total Woman Show

Even though it was Valentine's Day weekend, women came out in the thousands to the Total Woman Show in Kitchener!

We had a great time at the show; cooking up some fresh crimini mushrooms and handing out our delicious recipes.

Mushrooms Canada also held a draw where you could enter to win a T-Fal Hot Spot Frying Pan, and out of the hundreds of entries we received we drew.... Kriss G!

A Weekend at the London Wine and Food Show

I just returned home from a fabulous weekend at the London Wine & Food Show. There was plenty to be seen, heard, nibbled and sipped, with exhibitors ranging from Ontario wineries to local London restaurants.

Mushrooms Canada served up samples of fresh Sauteed Mushrooms, which proved to be a big crowd pleaser.

The Food Network Cooking Stage was definitely the place to be, with great demonstrations by Roger Mooking, Steam Whistle Brewery, and Chef Keith Ryan from Fanshawe College. I also had the opportunity to present a cooking demo on the Food Network Stage on Saturday night. I cooked up one of my favourite recipes, Sweet & Spicy Stir-Fried Mushrooms.


Mushrooms Canada also conducted a draw to win a T-Fal Hot Spot Frying Pan. Congratulations to Karen S. from London on winning, we hope you put it to good use sauteing up some fresh mushrooms!

Thanks to all who stopped by the Mushrooms Canada booth and enjoyed a sample, asked questions, entered the draw, and took home some wonderful recipes. We hope to see you again next year!
