Appetizer Spotlight FBC2017: Savoury Grilled Brie with Mushrooms & Thyme by The Grey Bell

Hi, I am Dana and one of my favourite things is to host and feed my friends and family. I have a Master’s degree and have a day job in municipal government, but food is my true passion.

I am farm-raised and we live on a dairy farm in rural Ontario. On the farm, the kitchen is so much more than where the cooking happens. It is the meeting place, where business deals are closed, and where the family comes together and this always inspires my cooking.

My blog is a mixture of homestyle comfort food made right and easy meals that are fresh and fast as I believe you need both in your life.

Savoury Grilled Brie with Mushrooms & Thyme
Savoury Grilled Brie with Mushrooms & Thyme has charred ooey-gooey melty cheese paired perfectly with rich fried mushrooms.

Ingredients

1 450 g. wheel of Canadian Double Cream Brie Cheese
1 tbsp. butterP
1 tbsp. olive oil + more for brushing
3½ cups thinly sliced mixed mushrooms
1 tsp. each salt and pepper
1 tbsp. Worcestershire sauce
1 tbsp. chopped fresh thyme
1 baguette

Method

1. Preheat grill to high.
2. Meanwhile, melt butter and oil in a frying pan over medium heat. Add mushrooms, salt, pepper and Worcestershire and thyme. Sauté until mushrooms are soft and golden. Remove from heat and set aside.
3. Meanwhile, slice baguette into one inch slices and brush with olive oil. Place on grill and grill with lid open until charred, about two minutes. Flip and repeat on opposite side. Remove from grill and set aside.
4. Prepare grill for indirect heat grilling. Place brie gently on grill and and grill over indirect heat until warmed and slightly charred, about 3-5 minutes per side.
5. Place mushrooms on top of brie and serve with grilled baguette slices.
