Guest Post: Sausage and Mushroom Egg Roll Bites

We have a guest in the kitchen today!! The amazing and talented Jenny Jack from The Brunette Baker is cooking up a storm today, sharing her delicious recipe with us that is perfect for any dinner party, Super Bowl party, or even just a girls night in!

 

I have a confession. This recipe derived out of necessity.

 

Allow me to explain.

 

I was busy working on two other projects when some friends of mine popped over unexpectedly. Our friends know our door is open anytime, so these sorts of visits are certainly not unheard of. However, knowing full well my fridge was down to the bare bones and I had nothing to serve them, not even a baked good, I panicked. I felt the slow prickle of heat crawl the surface of my body while sweat beads began forming over my top lip. You see, my fridge is usually stockpiled with staple ingredients to make any dish or nibble at a moment’s notice to avoid any sort of anxiety; my mother was the same way when it came to her kitchen, except she was forever the perfect hostess. When I was growing up, we lived in the country and the nearest grocery store was roughly twenty minutes away on a good day. If you needed an item, it wasn’t as simple as dropping everything and running to the store, so one had to be diligent with groceries. It’s funny how we become creatures of habit. 

 

The week had gotten away from me and I was desperate for a big food shop. I did a quick mental scan of the items I did have on my shelf while I took their coats and personal effects: a couple lemons, a red bell pepper and a few other vegetables, a punnet of mushrooms, wonton wrappers, four eggs, and a bag of coleslaw mix my mother-in-law had given me before she left on her trip to Florida, hoping I could find some use for it. I also had some sausage defrosting in there, but I had planned on using that for another recipe. Trying to come up with something fast, I remembered a recipe I had seen using several of the ingredients I happened to have on hand, sausage included, and gave the food gods a silent prayer of thanks.

 

I threw the ingredients together and told my company they were just in time for a snack. In less than twenty minutes, I shockingly had a delicious appetizer ready to serve. I couldn’t believe I could think that quickly on my toes. I also couldn’t believe how incredibly tasty these bites were. The best part was that my guests were none the wiser that I had a mental freak out. 

 

Maybe I should keep my fridge items scarce more often.

 

Then again, maybe not.

Sausage and Mushroom Egg Roll Bites

 

Prep Time: 10 minutes

Cook Time: 10 minutes

Yields: 24-36 bites

 

1 package of wonton wrappers

1 pound pork sausage

1 cup button mushrooms, finely chopped

1-14 ounce bag coleslaw mix

2 cloves garlic, finely chopped

2 tablespoons soy sauce

2 tablespoons sesame oil

½ teaspoon ground ginger

 

Garnish:

¼ cup chopped green onion

Sesame seeds for garnish

 

Preheat oven to 350 degrees F. 

 

Lightly spray a 12-cup muffin tin with a non-stick cooking spray. Place a wonton wrapper in each cup, moulding and pressing to conform to the shape of the tin. Bake wrappers for 5-7 minutes or until peaks begin to get a golden brown colour. Remove from oven and cool.

 

While wrappers are crossing in the oven, in a large skillet over medium-high heat, brown pork sausage, crumbling into smaller pieces as it cooks. Add in chopped mushrooms. Cook until sausage is no longer pink and mushrooms are tender.

Do not drain.

 

Add in chopped garlic, ground ginger, and soy sauce and cook for two minutes. Add in coleslaw mix. Cook until mix is tender. Drizzle sesame oil over top and give a good mix to incorporate all ingredients together.

 

Immediately fill baked wonton cups with mixture. Garnish with chopped green onion, sesame seeds and fried mushrooms slices, if desired.
