
Guest Post: Whipped Feta with Roasted Garlic Mushrooms and Tomatoes

This dip would be a wonderful addition to your holiday appetizers. Super simple to prepare, creamy whipped feta topped with roasted garlic mushrooms and tomatoes is a festive dish that will be sure to wow your guests (or immediate household this year) and have them coming back for more.
Ingredients
Whipped Feta
- 12 ounces feta cheese, at room temperature
- ¼ cup extra virgin olive oil
- 3 tablespoons water
- 1 teaspoon lemon zest
- 1 clove garlic, finely chopped
- A generous pinch of ground black pepper
Roasted Vegetable Topping
- 1 cup sliced white mushrooms
- 1 pint cherry tomatoes
- ¼ cup extra virgin olive oil
- 3 cloves garlic, finely chopped
- Salt and pepper to taste
- 1 teaspoon each fresh thyme and oregano, chopped
Method
- Preheat the oven to 375°F.
- Place the mushrooms, tomatoes, garlic (3 cloves), salt, and pepper into a mixing bowl. Drizzle with olive oil and toss until evenly coated. Spread out onto a rimmed baking sheet. Bake for 25-30 minutes.
- While the vegetables are roasting, let’s prepare our whipped feta. In a small food processor, break down the feta into smaller pieces and then add in olive oil, water, lemon zest, garlic (1 clove), and black pepper. Blend until feta is creamy and smooth. Set aside.
- Scoop out feta mixture into serving dish. Top with roasted mushrooms and tomatoes and drizzle with olive oil that is leftover in the pan. Sprinkle finished dish with chopped thyme and oregano for garnish.
- Serve with toasted baguette, pita triangles, crackers, breadsticks, or crudités.
