Long Weekend Recipes

Sunny?! Warm?! This is a Victoria Day weekend, is it not? Over the years, it has been rare that we see a May 2-4 weekend where we aren’t sitting around a campfire in long-johns and a winter coat, so LET’S CELEBRATE!
If you’re heading out, trailer-in-tow to a campground, packing up the cooler for an outdoor party, or getting the kids organized for an outdoor barbeque, Mushrooms Canada wants to help make the food part easy!
This is a great dinner dish if you’re heading to a campground. Simply alter the recipe to be cooked on a grill or over a fire by preparing each Baja Salmon Filet with Mushroom Salsa in a separate tin foil wrap.
If you’re on your way to a party, do up a large batch (it will go fast) of this Balsamic and Chili Glazed Mushrooms with Walnuts. It’s a dish that can be served hot or cold, so you can leave it out on the food table. The worst is trying to fuss with crock-pot or steamers when all you want to do is relax and enjoy yourself.

Porcupine Meatballs are an excellent snack for the kids and are easily prepared ahead of time. Just because your weekend plans involve the kids, doesn’t mean you spend your weekend cooking for them!
So sit back with a cold drink in hand this holiday weekend and soak up the sun, have some fun and indulge in the YUM!

Take her to her favourite place with her favourite people or better-yet, pamper her at home with your latest, greatest creations and really WOW her. Mushrooms Go PINK Round-Up

It has certainly been a busy month for PINK. And not just here in Canada, other countries like the US and Australia also showed support during Breast Cancer Awareness Month with PINK mushrooms.

So in case you missed it, here is what happened world-wide during Breast Cancer Awareness Month…

Canada

  • We toured! Hitting up cities all across Ontario and cooking up a storm on daytime TV. To see the support from TV stations & News outlets was incredible!
  • We doubled our “Likes” on Facebook! To date 1,886 people have “Liked” Mushrooms Go PINK on Facebook, meaning an additional donation will be made from Mushrooms Canada.
  • PINK Mushrooms were featured all across Canada. Even The Toronto Sun and Chatelaine took notice of our lovely PINK packaging!
  • We don’t know our final tally, but we hope to raise more money for the BCSC than last year!

United States

  • The Mushroom Council also had big plans for Breast Cancer Awareness Month, launching their PINK campaign on October 3rd.
  • Food Bloggers from all over the US showed an outpouring of support for PINK by creating delicious recipes that featured mushrooms.  Doughmesstic, La Fugi Mama, Aggie’s Kitchen, Cookin Lean, Food for my Family, Good Life Eats, Ingredients Inc., and Bell’alimento all took part in the post challenge.
  • @MushroomChannel, @CityofHope, and @MomItFoward hosted a #GNO Twitter Party on the goodness of mushrooms and why they are important to include in a healthy diet. The attendance and the conversation was amazing!
  • The Mushroom Council will donate $50,000 to the City of Hope Cancer Research.

The Great Thanksgiving Side-Dish Round-Up

September flew by in a rainy flash here in Southwestern Ontario. I really can’t believe that it is already October. I love the Fall months and everything it brings… bright colour leaves, cool breezes, sweaters, Trick-or-Treaters, and of course, Thanksgiving.

Thanksgiving is a big one for me. Indulging in Turkey, Stuffing & Mashed Potatoes is totally my thing. I am still lucky enough to get away with not hosting a Thanksgiving Dinner at my house (fingers crossed they don’t elect me next!), so often I will bring along a side-dish, adorned with mushrooms.

Beside being famous in my family for my stuffed mushrooms, I also have tried my hand at several other Thanksgiving favourites including a Squash Mushroom Bisque and Mushroom Scalloped Potatoes, just to name a few…

I have been looking for more inspiration lately, and since my Google Bookmarks is exploding with Thanksgiving Side-Dish goodness, I might as well share, after all it’s less than 3 days away!

Fire up the Grill with Dad this Father’s Day

What a gorgeous week it has been… and it’s about time! All this sunshine has really got me in the mood for a good ol’ BBQ, and with Father’s Day coming up on Sunday, I can’t think of a better way to spend time with my dad.

My dad likes to think of himself as a “Grill King”… last summer he went out and bought one of those fancy-schmancy BBQ’s… you know the ones with 4 burners, a grill, a rotisserie, and a million nobs… I know that he will be itching to show off his skills this weekend when everyone is visiting.

One of the easiest things to throw on the BBQ is kabobs. Our family loves kabobs because they can be customized to each person’s preference… some with chicken, some with beef, and others with just veggies! One thing is for sure though, my whole family loves mushrooms on their kabobs. I am going to try to get them to mix things up with year with a variety of criminis, portabellas, and king oysters.

Mushrooms are also low in calories, carbs and fat, they provide vitamins, minerals, fibre, antioxidants, and are the only vegetable with Vitamin D. Not to mention they have no cholesterol or sodium.

So, this Father’s Day help dad cook a meal that the whole family can enjoy.
